The breakfast egg roll is one of my obsessions. After discovering the air fryer, we now make egg rolls all the time! They used to be a treat we made every now and then at home. It’s so much easier than frying them in oil and they’re just as tasty!

A tasty twist on an egg sandwich, these Air Fryer Breakfast Egg Rolls are loaded with eggs, sausage, and veggies. This dish can be made ahead and reheated as needed.

Ingredients

  • 4 strips bacon
  • 4 egg roll wrappers
  • 2 large eggs
  • 1 cup cooked hashbrowns
  • 4 tbsp vegetable oil
  • 1/2 cup cheddar cheese
  • 1/2 tsp pepper
  • 1 tsp salt

Instructions

    • Put one egg roll wrapper flat on your belly with one corner pointing upwards.
    • The ingredients should be placed straight down the center of the egg roll wrapper. There should be a space at each end without filling of approximately 1/2 inch and a width of about 1 inch across diagonally.
    • The egg roll's two corners should be folded in enough so the fold touches the end of the filling.
    • Start folding the egg roll wrapper from the opposite side and fold over the two tucked-in corners and the egg roll filling. As you roll the eggroll, add some tension (but not too much) so that it forms a cylindrical shape.
    • For sealing the eggroll, brush water on its edge with a basting brush.
    • Air fry the eggroll at 375 degrees for 8 minutes, turning halfway during cooking. Spray the outside of the eggroll with vegetable oil.
