It’s no secret that coffee cake is one of the most classic desserts or snacks for any occasion. Served with morning coffee and afternoon tea, this is so good you might be tempted to serve it twice. A warm slice of this buttery, cinnamony delight is just too delicious to pass up (pun intended).

Crumble Coffee Cake cooked in an air fryer is beyond delicious. This soft cake is packed with candied fruits, dried nuts, and spices and will certainly delight your taste buds. There’s no doubt it will become a family favorite around the table for many years to come.

Ingredients

  • 3 egg yolks
  • ¼ cup of butter
  • ¼ cup of lukewarm water
  • 1 packet of active dry yeast
  • 3 ½ cups of all-purpose flour
  • ¾ cup of scalding hot milk
  • 1 teaspoon of vanilla extract
  • ¼ cup of white granulated sugar

For the Filling:

  • 2 tablespoons of butter
  • ½ cup of golden raisins
  • 1 teaspoon of cornstarch
  • 1 cup of candied mixed fruit
  • ¼ cup of white granulated sugar
  • One 9-ounce can of crushed pineapples
  • 1 cup of chopped nuts (I prefer walnuts and almonds)

For the Glaze:

  • 2 tablespoons of milk
  • 1 teaspoon of vanilla extract
  • 2 cups of sifted confectioners sugar

How to Make Crumble Coffee Cake

To Make the Dough

  • Count five minutes from the time you dissolve the yeast in warm water to when it blooms.
  • Heat the milk to scalding, then add the sugar and butter. It must be mixed thoroughly until the butter and sugar have dissolved completely.

  • Combine the flour with the egg yolks and vanilla extract in a mixing bowl. A sticky dough will form after mixing.
  • The bloomed yeast and the rest of the flour should be added at the same time. It is important to knead the dough until it forms a smooth consistency.

  • Make sure it is dry and warm before covering and letting it proof for an hour. You just need to let it sit for long enough for it to double in size.
  • Preparation of the filling can begin while the dough is proofing.

  • A small saucepan should be used to combine the crushed pineapple, sugar, and cornstarch. Once the crushed pineapple juices have been mixed into the cornstarch, stir the mixture until smooth.

  • In a medium saucepan, cook the mixture over medium heat, stirring constantly until thickened. There should be no more than two or three minutes required for this. 
  • After the mixture has cooled a little, stir it again. Add golden raisins, chopped nuts, and candied mixed fruits and stir to combine.

  • Wait until it has cooled completely before handling.

Assembling the Cake

  • During the last couple of minutes of doubled dough, gently knead it. Roll it out into an approximate 15″x18″ rectangle.
  • Prepare the fruit filling and spread it evenly on the dough, leaving an edge border of about half an inch.

  • Put it into a log and roll it up. You can chill it for 15 to 30 minutes in the refrigerator. Keeping the dough chilled will make it easier to slice later on.
  • After it has been chilled for at least a few hours, slice it into 1-inch slices. Bake the slices in a silicone bundt pan 9 inches in diameter cup-side up.

  • After an hour, let the dough proof again. It can then be placed in the air fryer basket.
  • During 30 minutes of air frying, heat the oil to 300 degrees (F). If you are going to unmold it, let it cool slightly before doing so. Be sure to let it cool completely before glazing. 

To Make the Glaze

  • A thick glaze will form once the confectioner’s sugar, milk, and vanilla extract are mixed together.
  • Then drizzle it over the Crumble coffee cake once it has cooled.
  • Please serve immediately after receiving.

This Air Fryer Crumble Coffee Cake was passed down to me by my grandmother and is one of my favorite recipes. The recipe is just adapted for an air fryer. It has been a long time since my Mamaw was here, but using her recipes keeps her memory alive. How long does the yeast have to bloom?

Yeast doesn’t have to bloom according to the rules, but in my experience, it’s much better to give it a little bit of time. For some reason, if it fails to bloom or is old, it can ruin the recipe and leave your guests doubting you. Being certain will save you a lot of time and hassle in the long run.

Is it possible to substitute milk with an alternative?

Most of the popular milk alternatives can be used in place of regular milk. Alternatives to dairy milk, such as almond milk, rice milk, oat milk, hemp milk, can help those with dairy sensitivities or lactose intolerances. The use of coconut milk is also possible, but it may not be the best choice due to its thicker consistency. 

Can I still eat eggs if I can’t have them?

Baking with egg yolks can be made easier by using several substitutes. Tofu puree can be substituted for each egg yolk with a tablespoon. Avocados can also be pureed and used as a substitute. The mixture of wheat flour, chickpea flour, water, and oil is also a good substitute. Combine the ingredients and blend until a suitable consistency is achieved.

Do I need to use a specific type of nut?

There is virtually no limit to what type of nuts you can use for this recipe. Walnuts and almonds are my favorite nuts. However, you should not shy away from using hazelnuts, pecans, and macadamia nuts. The required cup of chopped nuts can be made from any combination of nuts. It makes for an interesting flavor combination when all of these are combined.

For the Dough

  • 3 Egg Yolks
  • ¾ cup of scalding Hot Milk
  • 3½ cup of All-Purpose Flour
  • ¼ cups of Lukewarm Water
  • ¼ cup of Butter
  • ¼ cup of White Granulated Sugar
  • 1 (¼ oz.) packet of Active Dry Yeast
  • 1 teaspoon of Vanilla Extract

For the Filling

  • 2 tablespoons of Butter
  • 1 tablespoon of Cornstarch
  • ½ cup of Golden Raisins
  • 1 cup of Candied Mixed Fruit
  • ¼ cup of White Granulated Sugar
  • 1 (9 oz.) can of Crushed Pineapples
  • 1 cup of chopped Nuts (I used walnuts and almonds)

For the Glaze

  • 2 tablespoons of Milk
  • 1 teaspoon of Vanilla Extract
  • 2 cups of shifted Confectioner’s Sugar

Instructions

    For the Dough

    • Let the yeast bloom for five minutes in warm water after it is dissolved. Adding sugar and butter to scalding milk is a simple way to make a delicious dessert.
    • Add butter and sugar and mix well until they dissolve. A total of 1½ cups of flour, the egg yolks, and the vanilla extract should be added to the mixture.
    • The dough should form a sticky consistency after being mixed. To the remaining flour, add the yeast that has bloomed. You will need to knead the dough until it becomes smooth.
    • It should be covered with a towel and allowed to proof for one hour in a warm, dry place. Preparation of the filling should be done while the dough proofs.

For the Filling

  • Into a small saucepan, add pineapple, sugar, and cornstarch. Cornstarch should be dissolved in crushed pineapple juices after mixing well.
  • The mixture needs to be stirred continuously over medium heat until it thickens. It will take about two to three minutes.
  • Remove the mixture from the heat and let it cool slightly. You can also add golden raisins, chopped nuts, and candied mixed fruits at this point.
  • Ensure the mixture has cooled completely before handling.

Assembly

  • Upon reaching double size, knead the dough lightly for a few minutes. Form it into a rough rectangle about 15 inches by 18 inches.
  • Prepare the fruit filling and spread it evenly, keeping a border of 1/2 inch around the edges.
  • It should be rolled into a log tightly. After cooling, let it stand for 15 to 30 minutes. You can slice the rolled dough with sharp edges when it has been chilled. Take a slice of the log and cut it into 1-inch pieces.
  • Slice the bread and place it cup side up in a 9 inch silicone Bundt pan. Another hour will be needed to proof the dough.
  • It should be placed in the basket of the air fryer. A 30-minute air fry should be done at 300F.
  • When you are ready to unmold it, let it cool a bit before doing so. Prior to glazing the cake, it should be completely cooled.

For the Glaze

  • The confectioner's sugar, milk, and vanilla extract should form a thick glaze when combined.
  • Place the cooled Crumble coffee cake on a plate and drizzle with the glaze.
  • Prepare and serve immediately.
